Swiss Cheese Production

Introduction

Swiss cheese is ripened by the bacterium Propionibacterium sharmanii. The large holes in Swiss cheese are due to the production of a large amount of CO2 by this bacterium.

Core concept

Cheese is one of the oldest food items in which microbes were used. Different varieties of cheese are known by their characteristic texture, flavour and taste, the specificity coming from the microbes used: the 'large holed' Swiss cheese owes its holes to CO2 from Propionibacterium sharmanii; Roquefort cheese is ripened by growing a specific fungus on it, which gives it a particular flavour.

Go deeper

CO2 bubbles trapped in the cheese while it ripens leave the characteristic large holes (eyes).

From Class 10

The holes in Swiss cheese are made by gas from bacteria while the cheese ripens.
